
THE HIDDEN COST OF FOOD:
When you buy food neatly packaged up in the supermarket, it’s easy to forget it came from anywhere other than a shelf. The colourful advertising and convenience of supermarkets hide the journey our food takes, concealing its origins, the resources required for its creation, and the environmental impact of its production. As a result, the environmental consequences of our food choices often fade into the background, overlooked in the hustle of modern life.

Consider a cheeseburger, for example. To many, it’s a quick, satisfying meal you can pick up from the freezer aisle. Yet, behind each bite lies a resource-intensive story. Producing a single cheeseburger requires 660 gallons of water, 6 pounds of grain or soy feed, and the use of land that may have once been a thriving forest. This land, now stripped of biodiversity, reflects the hidden costs of everyday food production. In a world grappling with climate change, deforestation, and biodiversity loss, our choices at the dinner table carry more weight than we might realise.
WHAT THE RESEARCH REVEALS:
A recent UK-based study delved into the environmental costs of different diets, shedding light on the true impact of what we eat. They analysed over 3,000 participants who identified as vegans, vegetarians, fish-eaters, or meat-eaters, comparing their dietary choices against data on greenhouse gas emissions, land use, water consumption, and biodiversity impact. The findings revealed a clear link between the amount of animal-based food consumed and environmental harm.

The researchers asked participants about their typical food choices and predicted the environmental impact associated with these choices using information from food production databases. These databases hold big collections of data on how much water is needed to grow crops, how much land is used to raise animals, and how much carbon is released during production and transportation of goods. By applying this information to the participants’ diets, the researchers were able to compare the environmental footprints of each dietary group.
STRIKING DIETARY DIFFERENCES:
The study found interesting differences in the environmental impact of the diets. Vegans and vegetarians emerged as the least harmful to the planet, with their diets producing 50-70% less greenhouse gas emissions compared to meat-eaters. They also found that fish-eaters, though often thought of as one of the more sustainable option, had a higher environmental footprint than plant-based eaters in some areas of the study.
Importantly, the study also revealed that you don’t have to completely change your diet to improve your impact on the environment. They found that low-level meat-eaters produced around 57% less CO2 than high-level meat-eaters. This highlights that even small changes, like eating less meat, can significantly reduce the environmental footprint of your diet. Another spark of hope that the study unearthed was demographic differences in dietary categories. They found that vegans and vegetarians were generally younger than fish-eaters and meat-eaters, reflecting a generational shift toward more sustainable food choices. This trend among younger generations suggests that, if these behaviours continue to grow, collective dietary shifts could lead to meaningful reductions in environmental impact.
A CALL TO ACTION FOR PLANETARY HEALTH:
The findings of this study offer a clear call to action for the future of our planet. Agriculture, particularly livestock production, is responsible for about 25% of global greenhouse gas emissions (FAO, 2021) and consumes up to 70% of global freshwater (UN, 2021). These environmental costs highlight the pressing need for change in our food production and consumption habits. The way we produce and consume food plays a pivotal role in shaping the health of our planet, from the depletion of natural resources to the acceleration of climate change. By making conscious food choices, we have the power to significantly lower our environmental impact.
HOW TO FIND ANOTHER WAY:
The path to a more environmentally friendly food system requires both individual and collective action. As individuals, we can start by making small changes, like adopting “Meatless Mondays” or choosing sustainably sourced products, such as organic or locally grown produce. In fact, reducing meat consumption by just one day a week can lower an individual’s annual carbon footprint by up to 8% (Poore & Nemecek, 2018).
On a broader scale, the study suggests that governments and businesses can play a crucial role in facilitating change. Policies like mandatory environmental labelling on food, regulating promotions, and taxing high-carbon foods can help guide consumers toward more sustainable choices. These measures would increase awareness of the true environmental costs of our diets, making it easier for people to make informed decisions that align with the planet’s needs.
By combining these governmental/industry-level changes with individual action, we can collectively reduce our environmental impact, help preserve precious resources, and contribute to combating climate change.
